制作:(1)茄子去蒂洗净去皮,切成4厘米长,1厘米宽的条。(2)勺内放油,烧六七成热,下入茄条炸2分钟,呈金黄色时捞出沥油。(3)勺留少许底油,烧热,下葱末,姜末,蒜片炝锅,放入茄条后,再倒入酱油,白糖,料酒,盐,味精,汤,淀粉对好的汁,翻炒后出勺装盘,撒入芝麻,即好。
